The Savoir Faire of French Tables for stress-free entertaining

This forty-five minutes class will take you from the moment you RSVP to the minute you take your leave. It will demonstrate the proper setting of a table, covering almost every possible contingency in order to avoid dramas for both the host and the guest. Indeed, the accepted sequence one follows in the serving of a normal meal was designed centuries ago. It was meant to allow guests, independently of socio-economic backgrounds, to feel equally comfortable when breaking bread together, regardless of the occasion. This class will not cover table manners but will explain the historical and cultural reasons behind many of the accessories found on today’s tables as well as the timing and manner for their correct application.

is a seventh generation member of the family which created and developed the illustrious House of Christofle, recognised today as the world’s leading silversmith.
In Carline’s family, adhering to the principles of formal etiquette was simply a way-of-life. Indeed, many of the pieces initially designed by Christofle in 1830 were mostly cast to serve the needs of European and foreign courts. As such Christofle helped redefine and codify the way in which tables were set.
Since it is in her blood, Carline has taught entertaining etiquette in the USA, made how-to videos on the subject and hosted classes on US cable TV networks. She also gave monthly classes in Sydney when she first launched her business in 1996. Table Act Australia remains the exclusive importer and distributor of such renowned luxury brands as Saint Louis Crystal, Bernardaud porcelaine and of course, Christofle. Carline is a published author besides, writing thrillers in her free time.

During the class, you will be invited to taste 2 different fine wines from Bordeaux, imported by DiscoverVin, to put into practice what you will have learnt in the presentation.
An opportunity to finally understand our wines, our labels and our know-how! After this forty-five-minute presentation, lively, simple and educational, everything will be crystal clear to you! Knowing why the concept of « terroir » is dear to us, understanding our approach to wine-making, and reading our labels will be just as easy as choosing your bottles while shopping ! Together, we will discover this vineyard, apparently so complex and often criticized as elitist, and we will make its names, classification systems and blending rules look obvious!

Come along to an unforgettable champagne masterclass where the magic of champagne will be unlocked. Antoine Huray, brand manager from Canard-Duchene, and Amanda Reboul, finalist Vin de Champagne 2014, will explain the beauty of this exquisite drink and its origins to participants. Two different cuvees of the prestigious Canard-Duchene House will be tasted, and 10 lucky people will have the chance to be initiated into the Art of Sabrage. Canard-Duchene is one of the most prominent Grandes Marques in Champagne. Founded in 1868 by Victor Canard and Leonie Duchene, and located in Ludes, the Montagne de Reims provides Canard-Duchene with an exceptional location to source the highest quality fruit for its wines.

Your Presenter: Amanda Reboul & Antoine Huray

Your Presenters:
Amanda Reboul lived many years in France where she developed and interest in wines and champagnes with her French husband. Her understanding of wine making was enhanced by regular visits to winemakers in the Loire Valley, Burgundy, the Rhone Valley, Languedoc-Roussillon and Champagne (for which she has a particular passion). Countless tastings over the years have also served to develop her palate.
During her time in France, Amanda became inducted as a ‘Chavalier-Sabreur’ (sabering knight) with the Confrerie du Sabre d’Or, an association founded to promote the enjoyment of drinking champagne with the Art of Sabrage. Back in Australia Amanda was a finalist in the Prestigious Vin de Champagne Awards in 2014.
Antoine Huray, French export manager from the Champagne House Canard-Duchêne. Antoine’s experience and knowledge of Champagne engages as you taste Champagnes from Canard-Duchene.

Dessert wines of France: wine and cheese heaven

Discover the richness and versatility of French dessert wines from Sauternes and the south west of France. Tasting notes and maps provided. Petit Manseng and Gros Manseng, the grapes of Jurançon and Madiran in the foothills of the Pyrenees, produce dessert wines that will challenge traditional ideas of “stickies”. These wines have delicious fruit but have a balanced dry finish and avoid the cloying nature of many dessert wines.
Semillon, sauvignon and the autumn fog of the Sauternes region produce world famous botrytis affected dessert wines. Which style do you prefer? We will match with some French cheeses. Which one do you prefer now?
If you are a fan of dessert wine (and who’s not?!) you will be transported to wine heaven. If you have a sceptical partner, bring them along as these wines will amaze!

Craig has a technical qualification as a wine-maker, and is passionate about food and wine. He is adept at communicating about wine to the industry, fellow wine lovers and also those who consider themselves “beginners” wanting to learn more about food and wine. Craig travels to France regularly and it was after an extended sabbatical in Bordeaux 6 years ago that he co-founded DiscoverVin.
